Born in Romania and adopted as an infant, Miles Knapp was raised in Southern California in a large family of nine children all of whom built their careers in the food service and hospitality industry. As a fifth-generation chef, Miles grew up surrounded by the culinary world and developed a passion for international cuisine, particularly those rooted in classical French techniques. That foundation instilled in him a deep respect for tradition and craftsmanship, along with a creative curiosity that continues to shape his work in the kitchen today.

A graduate of Redlands East Valley High School, Miles later relocated to Utah to attend Utah Valley University, where he studied History and Music. Before returning to the culinary world full-time, he served several years as a police officer in multiple Utah cities. That experience strengthened his leadership and organizational skills while deepening his empathy, resilience, and attention to detail all qualities that now define his approach as a chef.

Miles believes deeply in the therapeutic and connective power of cooking, viewing it as both an art form and a way to bring people together. Outside of work, he enjoys spending time with his wife and five children, fishing, and riding motorcycles. A lifelong baseball fan, he proudly cheers for the Los Angeles Angels and maintains a growing collection of baseball cards “enthusiast” might even be an understatement. Miles also gives back to his community through coaching and officiating youth baseball, sharing his love for the game with the next generation.
